These local farmer’s market-inspired recipes are not only so delicious, they are also healthy and easy to make!

Cashew Butter and Raspberry Jam Overnight Oats

One of my favorite breakfasts. I love overnight oats in all forms, but these flavors together were something else...it tasted like a PB+J. If you’ve ever had the cold oats from Think Coffee (so good), these were up there with them! When I eat hot oatmeal, it doesn’t sit in my stomach well. When you allow them to soak in liquid they have time to break down, and are then much easier to digest. Farm to Table Foods is organic and their oatmeal is made with a blend of spelt and kamut. These flavors not only provide high protein but have a really unique flavor. If I’m on the go or know I have a busy morning the next day, I make this the night before. If you are making for multiple people you can just double up on the servings!

½ cup of unsweetened almond milk 

⅓ cup of organic ancient super grain oats from Farm to Table 

1 tablespoon of date sugar 

1 tablespoon of chia seeds 

1 tablespoon of creamy cashew butter (if you don’t have this PB would work just fine) 

1 tablespoon of raspberry jam

Mix, wait 8 hours, and top with raspberries and cashew butter!

Vegan Sweet Potato Black Bean Burgers

Homemade veggie burgers are a labor of love but a summer staple. This recipe makes eight. I usually eat the first half of them within the first 48 hours and then freeze four to have later! They’re vegan, high protein, and packed with nutrients from the sweet potato base.

3 washed, peeled, and shredded sweet potatoes (enjoy the arm workout…!) 

1 cup of oats blended in the nutribullet 

1 cup of chopped scallions 

1 cup of rinsed and drained black beans 

½ cup of vegan mayo (I use Chosen Foods, everything is natural in it) 

½ cup of tomato paste 

1 tbls. Olive oil 

1 tsp chili powder 

1 tsp cumin 

¼ tsp salt

Mix in a large bowl, then bake in the oven at 375 for 20 minutes. I like to serve it on a Dave’s Killer Bread seeded bun with a little mix of veggie mayo, ketchup, and hot sauce, lettuce, red onion, and avocado!
